Quality Meats

Our fresh sausage contains no MSG, fillers or additives and are gluten friendly.

We use lean muscle meats, make small batches fresh every day and never compromise our quality.

The Butchery Block was founded in 2018 by Shane Wolbaum. The idea to start the business was spurred on by rave reviews from family and friends who had sampled a homemade batch of sausage that Shane made from recipes and hand crafted meats passed down for three generations.

With a recipe in hand and ambition afoot Shane leased a building in Cochrane, Alberta and began to produce sausage with a hand-crank grinder and stuffer. Shane pursued this path and completed the Butchery and Charcuterie course at SAIT in 2019. The rest, as they say, is history.

Over the years, the production equipment has become more advanced and the product line and services have grown, but The Butchery Block is still operated with the same values and passion that Shane had at the start.

Certified Local

When we say local – we meant it! 

 

We have a strict “One Tank Trip” policy when we source our products. And it means exactly that – if we cannot get there and back in less than a single tank of fuel, it’s not really local now is it?

 

All our meat is provided at an extremely competitive market prices. By sticking to our One Tank Trip policy, we can ensure we keep costs at a minimum.

CHICKEN

We proudly offer chicken from HRC in High River, Alberta. For the past 33 years, they have raised their chickens with no antibiotics.

PORK

We bring in fresh sides of pork each week, which we source from a small Hutterite Colony near Picture Butte, Alberta.

 

Our selection includes:

We are honoured to provide our beef selection from Ben’s Quality Beef! They have Black & Red Angus and they are known to produce between 85% – 90% of the top 2% of beef in all of Canada!

SMOKED Sausage

The Butchery Block Homemade Smoked Sausage

 

All of our smoked sausages are ready to eat!

  • Smoked Garlic & Classic Smokie style sausages
  • Kielbasa (Polish Ukrainian Sausage that’s great with cabbage rolls and perogies!)
  • Cheddar Smokies (Classic smokie with high temp cheddar cheese that stays in the sausage, not on your grill!)
  • Jalapeno Smokies (Fresh chopped jalapenos, high temp cheddar and just a hint of heat)
  • Andouille (Louisiana Classic – great for gumbo, seafood boil, red beans and rice)
  • Chicken Apple Sausage (Fresh chopped apple, great on a Charcuterie board)

  • Sweet Italian Sausage (Fresh red bell peppers and fresh parsley)
  • German Bratwurst (Traditional brat great with saurkraut)
  • Russian Sausage (Fresh onion, parsley, garlic and dill. A family favourite!)
  • South African Boerewors (Tried, tested and true – confirmed by our customers from South Africa)
  • Chicken Sundried Tomato Basil Sausage (Fresh chopped basil and sundried tomato – great with pasta!)
  • Chicken Greek Island Sausage (Fresh chopped spinach and feta. Pairs perfectly with a pita and tzatziki dinner)
  • All Beef Sausage (Made from full muscle beef from the shoulder)
  • Morcilla Argentine Classic (not gluten friendly, fresh chopped green onion. Great on the grill!)
